The Handbook of Vegetable Science is the 86th and the most recently published book of the Food Science and Technology monographic series. It attempts to comprehensively gather and organize information regarding vegetable production from planting to sale. The contents are arranged by vegetable, including tubers, alliums, crucifers, legumes, leafy greens, fungi and other miscellany. Each chapter, devoted to one or a group of related vegetables, covers production, post-harvest handling, chemical composition, storage, and processing.With the need to feed a growing population, coupled with the increasing evidence of the necessity for fresh fruits and vegetables as a staple for a healthy diet, this compendium attempts to take a global view of the world's predominant vegetable crops. The reality is that contributing authors almost exclusively represent the United States and India. Furthermore, though Salunkhe and Kadam tout the compilation of new technological developments as a means for increasing production and reducing post-harvest losses, the references cited tend to be at least 20-30 years old. The style of the handbook is generally traditional. Do not expect any discussions of integrated pest management, permaculture, or organic methods. Alternately, one can easily ascertain such figures as optimal irradiation doses and CO2 levels for preservation.As a comprehensive overview and handbook, this is an excellent source for students studying horticulture, agricultural marketing, food science, and nutrition. The graphs, charts, and figures will prove exceptionally useful for practitioners (growers, processors, shippers, and scientific researchers) in both developed anddeveloping countries.
