Each listing also notes additional nutritional values -- including calories, fat, carbohydrate, protein, sodium, cholesterol -- that can help anyone balance his or her diet. The first section of the book covers fruits and vegetables, lean and flavorful meat, seafood and poultry dishes, imaginative soups and salads, and a variety of snack foods, casseroles, hor's d'oeuvres, breads, egg dishes, sauces, and beverages. The entire second half focuses on diabetics' biggest problem area: desserts. Author Biography

Mary Jane Finsand is the author of over a dozen highly successful diabetic cookbooks which were used in this compilation. Karin Cadwell, M. Ed., R.N. and Edith White, R.N., who worked closely with Mrs. Finsand on her first books, wrote the final two titles.
