Lemon-Apple-Thyme Dressing

Sweet tart and mellow—Try this over a mix of lettuces and some paper-thin red onion and chunks of avocado.

Ingredients:

½ cup (120 ml) extra-virgin olive oil
1 medium garlic clove
½ lemon
2 tablespoons (30 ml) apple cider vinegar
1  teaspoon fresh thyme leaves or ¼ to ½ teaspoon dried thyme
? teaspoon  pepper
? teaspoon  salt
10 drops  liquid stevia

Directions:

Put the olive oil in your blender along with the garlic.

Grate the zest of the half lemon and squeeze the juice. It should yield about 2 tablespoons (30 ml). Add to the blender, along with the rest of the ingredients.

Blend until the garlic is pulverized, and then toss with your salad!

Yield:

¾ cup, 6 servings
