Bear Meat Mountaineer Stew

2 1/2 lbs Meat

2 1/2 cups Water

1 tsp. Salt

1/2 tsp. Pepper

1/2 cup Greens (Onions)

3 or 4 Carrots

3 or 4 Sego Lily Bulbs (Potatoes Substitute)

2 cups wild Vegetables (or store bought)

3 tbsp. Flour and 1/4 cup Water

Cut meat in small pieces. Add water and spices. Cover Dutch Oven and simmer for 1 1/2 hours, stir occasionally. Add all the rest of ingredients and simmer till tender. Mix flour and water together and make paste. Add to stew. By changing meat to lamb and adding peas the last 15 minutes, this becomes Irish Mountain Stew.
